Prepare the Meats and Cheese
Slice the smoked ham, provolone cheese, and sopressata salami into thin strips. Chop the chives finely and set aside.

Combine Ingredients
In a mixing bowl, combine mayonnaise, ketchup, lemon juice, hot sauce, salt, and pepper. Stir well until all ingredients are fully incorporated and the mixture is smooth.

Assemble the Cartoccio
Take a large piece of parchment paper or aluminum foil. Layer the sliced smoked ham, provolone cheese, and sopressata salami in the center. Sprinkle the chopped chives over the top.
