Calamari Preparation

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the tentacles and the inside of the body. Cut the calamari bodies into rings.

    Prepare the Breading

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well to ensure even distribution of spices.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Calamari

    Dredge the calamari rings and tentacles in the flour mixture, ensuring they are well coated. Shake off any excess flour.

    Fry the Calamari

    Carefully add the breaded calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add the Tomatoes

    Pour in the canned crushed tomatoes and stir well.

    Season the Sauce

    Add the dried oregano, salt, black pepper, fresh basil, and sugar. Stir to combine. Let the sauce simmer for about 15 minutes, stirring occasionally.
