Method

Meats

  1. 1

    Prepare the Meats

Arrange the Proscuitto di Parma and Sopressata Salami on a large platter in an aesthetically pleasing manner.

Cheeses

  1. 2

    Prepare the Cheeses

Cut the Mozzarella into bite-sized pieces and slice the Parmigiano-Reggiano into thin wedges. Add these to the platter alongside the meats.

Vegetables

  1. 3

    Grill and Marinate the Vegetables

Slice the bell peppers, zucchini, and eggplant into strips. Grill them until tender and slightly charred. You can marinate them in olive oil, salt, and pepper for added flavor before grilling.

  2. 4

    Arrange the Vegetables

Once grilled, arrange the marinated vegetables on the platter with the meats and cheeses.

Pesto Verde

  1. 5

    Make the Pesto Verde

In a food processor, combine fresh basil, pine nuts, Parmesan cheese, garlic, and olive oil. Blend until smooth. Season with salt and black pepper to taste.

  2. 6

    Serve the Pesto Verde

Place the pesto in a small bowl and add it to the platter for dipping.

Bruschetta

  1. 7

    Prepare the Bruschetta

Slice the baguette into 1/2-inch thick slices. Toast them lightly in an oven or on a grill.

  2. 8

    Make the Topping

In a bowl, combine diced tomatoes, minced garlic, chopped fresh basil, olive oil, and salt. Mix well.

  3. 9

    Assemble the Bruschetta

Top each toasted baguette slice with the tomato mixture and arrange them on the platter.
