Prepare the Ingredients
Make sure the cooked rice is cold and preferably day-old for the best texture. Dice the carrots and chop the green onions. If using chicken or shrimp, ensure they are cooked and cut into bite-sized pieces.

Heat the Wok
Place a wok or large skillet over medium-high heat and add 2 tablespoons of vegetable oil. Allow the oil to heat until it shimmers.

Stir-Fry Vegetables
Add the remaining tablespoon of vegetable oil to the wok. Add the diced carrots and stir-fry for about 2 minutes until slightly tender. Then, add the frozen peas and stir-fry for another minute.

Combine Rice and Vegetables
Add the cooked rice to the wok. Use a spatula to break up any clumps and stir it together with the vegetables over high heat for about 3-4 minutes.

Pour the soy sauce over the rice and season with salt and black pepper. Stir well to combine all ingredients.
