Method

Batter Preparation

  1. 1

    Mix the Batter Ingredients

In a large mixing bowl, combine the rice flour, cornstarch, turmeric powder, coconut milk, water, and salt. Whisk until smooth and set aside for about 30 minutes.

Filling Preparation

  1. 2

    Cook the Filling

In a skillet, heat 2 tablespoons of vegetable oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add diced chicken breast and cook until no longer pink, then add the prawns and cook until they turn pink and opaque. Stir in bean sprouts and chopped green onions, cooking for an additional 2-3 minutes. Remove from heat and set aside.

Cooking the Pancakes

  1. 3

    Cook the Pancakes

In a non-stick skillet, heat 1 tablespoon of vegetable oil over medium heat. Pour in a ladle of the batter, swirling to coat the pan evenly. Cook for 3-4 minutes until the edges begin to crisp. Place a portion of the filling in the center and fold the pancake in half. Cook for another 2-3 minutes until golden brown. Repeat for the remaining batter and filling.

Dipping Sauce Preparation

  1. 4

    Mix the Dipping Sauce

In a small bowl, combine fish sauce, lime juice, sugar, and chili garlic sauce. Stir well until the sugar dissolves.
