Preparation

    Prepare the Tofu

    Drain the tofu and press it between paper towels to remove excess moisture. Cut it into bite-sized cubes.

    Chop the Vegetables

    Finely chop the onion, garlic, and ginger. Dice the bell pepper and slice the carrot into thin rounds. Rinse the spinach and set aside.

Cooking

    Sauté the Base

    In a large pan, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onions become translucent.

    Add the Vegetables

    Add the diced bell pepper and sliced carrot to the pan. Cook for about 5 minutes, stirring occasionally.

    Add Spices

    Stir in the curry powder, turmeric, cumin, salt, and black pepper, cooking for an additional 2 minutes until fragrant.

    Add Tofu and Tomatoes

    Gently fold in the cubed tofu and diced tomatoes. Pour in the coconut milk and stir to combine.

    Simmer the Curry

    Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

    Finish with Spinach

    Add the spinach to the curry and cook for an additional 2-3 minutes, until wilted.

    Taste and adjust seasoning if necessary. Serve hot over rice or with naan.
