Preparation of Ingredients

    Cook the Prawns

    In a pot of boiling salted water, add the prawns and cook for about 3-4 minutes until they turn pink and opaque. Drain and let cool, then slice them in half lengthwise.

    Prepare the Noodles

    Soak the rice vermicelli noodles in hot water for about 10 minutes or until softened. Drain and set aside.

    Prepare the Vegetables

    Julienne the carrot and cucumber into thin strips. Set aside.

Assembling the Summer Rolls

    Soak the Rice Paper Wrappers

    Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft. Lay it flat on a clean surface.

    Add the Filling

    In the center of the wrapper, place a few pieces of prawn, a small handful of rice vermicelli noodles, some carrot and cucumber strips, and a few mint and cilantro leaves. Top with a lettuce leaf.

    Roll the Wrapper

    Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly from the bottom to the top. Repeat with remaining wrappers and filling.

Making the Dipping Sauce

    Combine Ingredients

    In a small bowl, mix together the soy sauce, peanut butter, honey, lime juice, water, and sesame oil until smooth and well combined.

Serving

    Serve the Rolls

    Arrange the summer rolls on a platter and serve with the dipping sauce on the side.
