    Wash the Chinese leaf thoroughly and cut it into bite-sized pieces. Peel and julienne the carrot. Slice the bell pepper into strips. Mince the garlic and ginger.

Sauce Preparation

    Mix the Sauce

    In a small bowl, combine the soy sauce, oyster sauce, sesame oil, sugar, and chili paste (if making the spicy version). Stir well to mix all the ingredients.

Stir Frying

    Heat the Oil

    In a large pan or wok, heat the vegetable oil over medium-high heat until shimmering.

    Stir Fry the Aromatics

    Add the minced garlic and ginger to the hot oil and stir-fry for about 30 seconds until fragrant.

    Add the Vegetables

    Add the chopped Chinese leaf, julienned carrot, and bell pepper strips to the pan. Stir-fry for 3-4 minutes until the vegetables start to soften.

    Add the Sauce

    Pour the prepared sauce over the stir-fried vegetables. Toss everything together to coat the vegetables evenly with the sauce. Continue to stir-fry for another 2-3 minutes.

    Once the vegetables are tender but still crisp, remove from heat. Serve hot as a side dish or over rice or noodles.
