Prepare the Filling

    Cook the Pork

    In a skillet over medium heat, add the pork mince. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat.

    Sauté Aromatics

    Add the minced garlic and grated ginger to the skillet with the pork. Sauté for 1-2 minutes until fragrant.

    Add Seafood and Vegetables

    Stir in the king prawns, cooked crab meat, chopped spring onions, and grated carrot. Cook for another 3-4 minutes until the prawns turn pink.

    Season the Mixture

    Add the soy sauce and sesame oil to the mixture. Stir well and cook for an additional 1 minute. Remove from heat and let cool.

Assemble the Spring Rolls

    Prepare the Wrappers

    Lay a spring roll wrapper on a clean, flat surface with one corner pointing towards you.

    Fill the Wrapper

    Place 2-3 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to form a spring roll.

    Moisten the top corner of the wrapper with water to seal the roll. Repeat with the remaining wrappers and filling.

Cook the Spring Rolls

    Heat Oil

    In a deep frying pan or wok, heat enough oil to cover the bottom over medium-high heat.

    Fry the Rolls

    Carefully add the spring rolls to the hot oil in batches, frying for about 3-4 minutes on each side until golden brown and crispy.

    Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
