Preparation of Cider

    Peel the fresh ginger root and slice it thinly. Measure out 1 tablespoon of the sliced ginger and set aside.

    In a large pot, combine the fresh apple juice, sliced ginger, cinnamon sticks, cloves, star anise, brown sugar, and lemon juice.
