    Rinse the fresh raspberries under cold water and gently pat them dry with a paper towel. Remove any stems or leaves.

    In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally until the sugar is completely dissolved. Remove from heat and allow to cool.

    In a blender or food processor, combine the rinsed raspberries, cooled sugar syrup, and lemon juice. Blend until smooth.

    If you prefer a smoother texture, you can strain the raspberry mixture through a fine-mesh sieve to remove the seeds.

Freezing

    Chill the Mixture

    Pour the raspberry mixture into a shallow dish or a freezer-safe container. If using, add the mint leaves for extra flavor.

    Place the dish in the freezer. After 30 minutes, stir the mixture with a fork to break up any ice crystals. Repeat this process every 30 minutes for about 2-3 hours, or until the sorbet is firm and fluffy.
