Prawn Crackers Preparation

    Blend Prawn Meat

    In a food processor, blend the prawn meat until it forms a smooth paste.

    Combine Ingredients

    In a mixing bowl, combine the blended prawn meat, tapioca flour, water, and salt. Mix until you achieve a smooth and thick dough.

    Shape the Dough

    Transfer the dough to a clean surface and roll it out to about 1/4 inch thickness. Cut into desired shapes, such as circles or squares.

    Dry the Crackers

    Place the cut shapes on a tray lined with parchment paper and allow them to air dry for at least 2 hours or until they are hard.

    Fry the Crackers

    Heat the vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, fry the dried prawn crackers in batches until they puff up and turn golden brown, about 2-3 minutes. Remove and drain on paper towels.

    In a small bowl, combine mayonnaise, sriracha sauce, lime juice, garlic powder, and salt. Mix well until smooth and creamy.
