Broth Preparation

Roast the Bones
Preheat your oven to 200°C (400°F). Place the beef bones on a baking tray and roast for about 30 minutes until browned.

Simmer the Broth
In a large pot, add the roasted bones and 3 liters of water. Bring to a boil, then reduce the heat to low. Skim off any foam that rises to the surface.

Strain the Broth
After simmering, strain the broth through a fine mesh sieve into another pot, discarding the solids. Adjust seasoning with salt, if necessary.
Noodle and Topping Assembly

Cook Noodles
Bring a separate pot of water to boil. Add the rice noodles and cook according to package instructions (usually about 5-7 minutes). Drain and set aside.

Prepare Beef
Thinly slice the beef sirloin against the grain. You can briefly freeze the beef to make slicing easier.

Assemble the Bowl
In a bowl, place a portion of the cooked rice noodles. Top with raw beef slices, then ladle hot broth over the top to cook the beef.

Garnish
Add fresh herbs, bean sprouts, lime wedges, and chili peppers to taste. Serve immediately.
