Broth Preparation

    Prepare the Beef Bones

    Rinse the beef bones under cold running water to remove any blood or impurities. Place them in a large pot.

    Boil and Simmer

    Add 4 liters of water to the pot with the beef bones. Bring to a boil and then reduce the heat to a simmer. Skim off any foam that forms on the surface.

    Char the Onion and Ginger

    While the broth simmers, char the onion and ginger over an open flame or in a dry skillet until they are slightly blackened. This adds depth of flavor.

    Add Aromatics

    Add the charred onion, ginger, star anise, cloves, cinnamon stick, fish sauce, salt, and sugar to the pot. Simmer the broth for at least 3-4 hours, or longer for more flavor.

    Strain the Broth

    Once the broth is ready, strain it through a fine-mesh sieve to remove the solids. Return the liquid to the pot and keep warm.

Noodle and Topping Preparation

    Prepare the Rice Noodles

    Soak the rice noodles in warm water for about 30 minutes until they are softened. Drain and set aside.

    Prepare the Beef

    If using frozen beef, ensure it is partially frozen to make slicing easier. Thinly slice the beef sirloin or brisket against the grain.

    Serve the Pho

    In a bowl, place a portion of softened rice noodles. Top with raw sliced beef. Pour hot broth over the noodles and beef, allowing the heat to cook the beef slightly.

    Add Fresh Herbs and Garnishes

    Garnish with fresh cilantro, basil leaves, lime wedges, bean sprouts, and sliced chili peppers as desired.
