Broth Preparation

    Roast the Aromatics

    Place the onion and ginger under a broiler or on an open flame until charred. This enhances the flavor of the broth.

    Boil the Bones

    In a large pot, add the beef bones and cover with 4 liters of water. Bring to a boil and skim the foam that rises to the surface.

    Simmer the Broth

    Add the charred onion, ginger, star anise, cinnamon stick, and cloves to the pot. Reduce heat to a simmer and cook for at least 3 hours, skimming occasionally.

    Season the Broth

    After simmering, strain the broth to remove solids. Return the liquid to the pot and stir in the fish sauce and salt to taste.

Noodle & Topping Preparation

    Cook the Noodles

    In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

    Prepare the Beef

    Thinly slice the beef sirloin or brisket against the grain. This ensures tenderness.

    Assemble the Pho

    In bowls, place a portion of the cooked noodles, top with raw beef slices, and ladle the hot broth over them to cook the beef.

    Add Toppings

    Garnish the pho with fresh herbs, bean sprouts, lime wedges, sliced chili peppers, and chopped green onions.
