    Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.

    Mix Dry Ingredients

    In a large bowl, whisk together all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and sugar until well combined.

    In another bowl, beat the eggs and then add vegetable oil, vanilla extract, and milk. Mix until well blended.

Combining

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.

    Add Carrots, Raisins, and Walnuts

    Fold in grated carrots, raisins, and chopped walnuts until evenly distributed.

    Add Jalapeño (if making spicy)

    If you are making the spicy version, finely chop the jalapeño and fold it into the batter.

Baking

    Fill Muffin Tin

    Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
