Preparing the Broth

    Roast the Bones

    Preheat the oven to 200°C (400°F). Place the beef bones on a baking sheet and roast for 30 minutes, turning halfway through, until browned.

    Prepare the Aromatics

    While the bones are roasting, peel and halve the onion. Slice the ginger into thick slices.

    Simmer the Broth

    In a large pot, combine the roasted bones, water, onion, ginger, star anise, cinnamon stick, and cloves. Bring to a boil, then reduce heat to low and simmer for at least 4 hours, skimming off any foam that rises to the top.

    Strain the Broth

    After simmering, strain the broth through a fine-mesh sieve into another pot. Discard the solids. Add fish sauce and salt to taste. Keep warm.

Cooking the Noodles and Beef

    Prepare the Rice Noodles

    Cook the rice noodles according to package instructions, usually soaking in hot water for about 10-15 minutes until soft. Drain and set aside.

    Slice the Beef

    Thinly slice the beef sirloin against the grain. This will help it cook quickly and remain tender.

Assembling the Pho

    Prepare the Bowls

    In each serving bowl, place a portion of the cooked rice noodles and raw beef slices on top.

    Ladle the Broth

    Bring the broth back to a boil. Ladle the hot broth over the noodles and beef, which will cook the beef instantly.

    Garnish and Serve

    Top with green onions, cilantro, bean sprouts, lime wedges, Thai basil, and sliced chili peppers. Serve immediately.
