Prepare the Broth

Cook the Chicken
In a large pot, combine the chicken breast and chicken broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 15 minutes, or until the chicken is fully cooked.

Add Aromatics
To the pot, add ginger, garlic, star anise, cinnamon stick, fish sauce, salt, and sugar. Simmer for an additional 20 minutes to infuse the flavors into the broth.

Remove Chicken
Once the broth is infused, remove the chicken breast from the pot. Allow it to cool slightly, then shred it into bite-sized pieces.

Strain the Broth
Strain the broth through a fine mesh sieve to remove the solids, returning the clear broth to the pot.
Prepare the Noodles

Cook the Noodles
In a separate pot, bring water to a boil. Add the flat rice noodles and cook according to package instructions, usually around 3-5 minutes. Drain and rinse under cold water to stop the cooking process.
Assemble the Mini Phở

Combine Ingredients
In a serving bowl, place a portion of the cooked noodles. Top with shredded chicken and ladle the hot broth over the top.

If desired, garnish with chopped spring onions. Serve immediately.
