Making the Broth

Prepare the Ingredients
Rinse the chicken bones or vegetable scraps under cold water to remove any impurities.

Simmer the Broth
Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for at least 1 hour. Skim off any foam that rises to the surface.

Season the Broth
After simmering, add fish sauce and salt to taste. Continue to simmer for another 10 minutes.

Strain the Broth
Remove the pot from heat and strain the broth through a fine sieve into another pot, discarding solids.
Preparing the Prawns

Clean the Prawns
Peel and devein the king prawns, leaving the tails on if desired.

Cook the Prawns
In a separate pot of boiling water, cook the prawns for about 2-3 minutes or until they turn pink and opaque. Remove from heat and drain.
Preparing Noodles and Garnishes

Cook the Rice Noodles
In a pot of boiling water, cook the rice noodles according to package instructions. Drain and set aside.

Prepare the Garnishes
Chop the green onions, and slice the chili. Rinse the bean sprouts under cold water.
Assembling the Dish

Serve the Pho
In a bowl, place a portion of cooked rice noodles, add the cooked prawns, and pour the hot broth over. Garnish with bean sprouts, cilantro, green onions, lime wedges, and sliced chili.
