    Prepare the Meatball Mixture

    In a large mixing bowl, combine the ground pork, breadcrumbs, egg, minced garlic, chopped onion, parsley, salt, and black pepper. Mix thoroughly with your hands or a spoon until all ingredients are well incorporated.

    Form the Meatballs

    Using your hands, shape the mixture into meatballs about 1 inch in diameter. Place them on a plate or baking sheet lined with parchment paper.

    Cook the Meatballs

    In a large skillet, heat the olive oil over medium heat. Once hot, add the meatballs in batches, cooking for about 5-7 minutes on each side until they are browned and cooked through, reaching an internal temperature of 160°F (71°C). Remove from skillet and set aside.

    Rinse the Rice

    In a fine mesh strainer, rinse the white rice under cold water until the water runs clear, about 2-3 minutes.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare the Veggies

    While the meatballs and rice are cooking, wash and slice the carrot, cucumber, and bell pepper. Arrange them on a serving platter.
