Prepare the Batter

    Mash the Bananas

    In a large mixing bowl, mash the ripe bananas with a fork until smooth, leaving some small chunks for texture.

    Mix Dry Ingredients

    In another bowl, whisk together the all-purpose flour, sugar, baking powder, salt, and cinnamon until well combined.

    Combine Ingredients

    Add the dry ingredients to the mashed bananas. Pour in the milk and vanilla extract, and mix until just combined. Do not overmix; it’s okay if there are a few lumps.

Fry the Fritters

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and float to the top.

    Fry the Fritters

    Using a spoon, drop tablespoons of the batter into the hot oil, making sure not to overcrowd the pan. Fry until golden brown, about 2-3 minutes on each side.

    Drain the Fritters

    Once golden brown, remove the fritters with a slotted spoon and drain on paper towels to remove excess oil.
