    Chop Vegetables

    Dice the onion, slice the bell pepper, carrot, zucchini, and mushrooms into bite-sized pieces. Rinse the spinach and set aside.

    Prepare Ingredients

    Measure out the coconut milk, vegetable broth, curry paste, soy sauce, and lime juice into separate bowls.

Cooking

    Cook the Onions

    In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add Curry Paste

    Stir in the curry paste and cook for an additional 2 minutes, allowing the spices to bloom.

    Add Liquids

    Pour in the coconut milk and vegetable broth. Stir to combine and bring to a gentle simmer.

    Add Vegetables

    Add the bell pepper, carrot, zucchini, and mushrooms. Cook for 10-15 minutes, or until the vegetables are tender.

    Stir in the spinach and cook for an additional 2-3 minutes until wilted.

    Add the soy sauce and lime juice, stirring to combine. Adjust seasoning to taste.

Serving
