Prepare the Beef Brisket
Trim excess fat from the brisket and pat it dry with paper towels. Rub the brisket generously with salt, black pepper, and sugar. Let it sit at room temperature for about 30 minutes.

Prepare the Aromatics
While the brisket is resting, peel and crush the garlic cloves. Slice the ginger into thin pieces. Set aside the star anise, cinnamon stick, and cloves.
Cooking

Slow Cook the Brisket
In a large pot or slow cooker, add the 3 liters of water. Place the seasoned brisket in the pot. Add the crushed garlic, sliced ginger, star anise, cinnamon stick, and cloves. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 4 to 5 hours or until the brisket is tender. Check occasionally and add more water if necessary.

Rest the Brisket
Once the brisket is tender, carefully remove it from the pot and let it rest for 15 minutes before slicing.
