Battered Chicken Nuggets

Prepare the Chicken
Cut the chicken breast into bite-sized pieces and set aside.

Make the Batter
In a bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well.

Add Water
Gradually add cold water to the dry ingredients, whisking until you achieve a smooth batter.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until hot.

Fry the Nuggets
Dip each chicken piece into the batter and carefully place it into the hot oil. Fry in batches for about 5-7 minutes, or until golden brown and cooked through.

Drain the Nuggets
Remove the fried chicken nuggets and place them on a plate lined with paper towels to absorb excess oil.

Rinse the Rice
Rinse the long-grain rice under cold water until the water runs clear.

Cook the Rice
In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce to low heat, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

Fluff the Rice
Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.

Arrange the Raw Veggies
Place the prepared raw veggies on a serving platter.
Prawn Crackers

Serve the Prawn Crackers
Open the pack of prawn crackers and place them in a bowl for serving.
Sweet Fish Sauce

Mix the Sauce
In a small bowl, combine fish sauce, sugar, lime juice, and chili flakes. Stir well until the sugar is dissolved.

Serve the Sauce
Transfer the sweet fish sauce to a small serving dish.
