Method

Directions

  1. 1

    Sauté the Vegetables

Add the minced garlic and chopped carrots, cooking for an additional 3-4 minutes until the carrots start to soften.

  2. 2

    Add Tomatoes and Broth

Stir in the canned whole tomatoes (with their juice) and vegetable broth. Bring the mixture to a boil.

  3. 3

    Season the Soup

Once boiling, reduce the heat and add the chopped basil, salt, black pepper, and sugar. Simmer for 20 minutes, allowing the flavors to meld.

  4. 4

    Blend the Soup

Using an immersion blender, puree the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.

  5. 5

    Add Cream (Optional)

If desired, stir in heavy cream for a richer flavor and creamier texture. Heat through but do not boil.

  6. 6

    Serve

Ladle the soup into bowls and garnish with additional basil leaves if desired. Serve warm.
