Cake Batter

Method

Preparing the Batter

  1. 1

    Melt the Chocolate and Butter

In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Heat in the microwave in 30-second intervals until melted and smooth, stirring after each interval.

  2. 2

    Mix in Sugar

Once melted, remove the bowl from the microwave and whisk in the granulated sugar until well combined.

  3. 3

    Add Eggs and Vanilla

Add the large eggs and egg yolks to the mixture. Whisk until fully incorporated. Stir in the vanilla extract.

  4. 4

    Incorporate Dry Ingredients

Sift in the all-purpose flour and salt. Gently fold the flour into the batter until just combined. Be careful not to overmix.

Baking the Cakes

  1. 5

    Preheat and Prepare Ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out any excess.

  2. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  3. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

  4. 8

    Cool and Serve

Remove from the oven and let sit for 1 minute. Carefully invert each ramekin onto a dessert plate and serve immediately while warm.
