Preparing the Rice Pilaf

    Sauté the Onion

    In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

    Toast the Rice

    Add the long grain rice to the saucepan and stir to coat the rice in the butter and onion. Cook for 2-3 minutes until the rice is slightly toasted.

    Cook the Rice

    Pour in the chicken broth and add 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.

Preparing the Trout Amandine

    Season the Trout

    While the rice is cooking, season the rainbow trout fillets with salt and pepper on both sides.

    Brown the Butter

    In a large skillet, melt 1 stick of butter over medium heat. Continue to cook the butter until it turns golden brown and develops a nutty aroma, about 5-7 minutes. Be careful not to burn it.

    Add the Almonds

    Stir in the sliced almonds into the browned butter and cook for an additional 2-3 minutes until they are lightly toasted.

    Cook the Trout

    Carefully add the seasoned trout fillets to the skillet with the almond brown butter. Cook for about 3-4 minutes on each side, or until the trout is cooked through and flakes easily with a fork.

    Finish the Dish

    Once the trout is cooked, drizzle with lemon juice and sprinkle chopped parsley on top before serving.
