Method

Roasting the Chicken

    Preparation of the Chicken

    Preheat your oven to 425°F (220°C). Rinse the whole chicken under cold water and pat dry with paper towels. Place the chicken in a roasting pan.

    Seasoning

    In a small bowl, mix the olive oil, salt, black pepper, and minced garlic. Rub this mixture all over the chicken, including under the skin for maximum flavor.

    Adding Vegetables

    Chop the carrots and shallots into large pieces. Place them around the chicken in the roasting pan. Sprinkle the fresh tarragon over the chicken and vegetables.

    Roasting

    Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its juices halfway through.

    Resting

    Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Preparing Pommes Frites

    Preparing the Potatoes

    While the chicken is roasting, peel the potatoes and cut them into thin strips (about 1/4 inch thick).

    Soaking

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Frying

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-6 minutes. Remove with a slotted spoon and drain on paper towels.

    Seasoning

    Sprinkle the fries with salt immediately after frying. Serve hot alongside the roasted chicken.
