Method

Preparation

  1. 1

    Prepare the Potatoes

Peel the Russet potatoes and cut them into evenly sized chunks, about 1-2 inches.

  2. 2

    Boil the Potatoes

Place the potato chunks in a large pot and cover them with cold water. Add a teaspoon of salt and bring to a boil over medium-high heat.

  3. 3

    Cook the Potatoes

Once boiling, reduce the heat to medium and let the potatoes simmer until they are fork-tender, about 15-20 minutes.

Making the Purée

  1. 4

    Drain and Dry

Once the potatoes are cooked, drain them in a colander and let them sit for a few minutes to allow excess moisture to evaporate.

  2. 5

    Mash the Potatoes

Using a potato masher or ricer, mash the potatoes until smooth and lump-free in a large mixing bowl.

  3. 6

    Add Butter and Cream

In a small saucepan, melt the unsalted butter over low heat. Warm the heavy cream in another saucepan until just heated through. Gradually add the melted butter and warm cream to the mashed potatoes, stirring until creamy and well combined.

  4. 7

    Season to Taste

Add salt and freshly ground black pepper to the mashed potatoes, and mix to incorporate. Taste and adjust seasoning if necessary.

Optional Garnishing

  1. 8

    Add Garlic (Optional)

If using garlic, finely mince the garlic cloves and sauté them in a small amount of butter before adding to the potatoes.

  2. 9

    Garnish with Chives (Optional)

Finely chop the fresh chives and sprinkle them over the finished Pommes Purées for a burst of flavor and color.
