Brioche French Toast

Seasonal Fruit

Method

Prepare the Brioche French Toast

  1. 1

    Whisk the Batter

In a medium bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

  2. 2

    Soak the Brioche

Dip each slice of brioche bread into the egg mixture, ensuring both sides are fully coated. Let them soak for about 1-2 minutes to absorb the mixture.

  3. 3

    Cook the Toast

In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Place 2 slices of soaked brioche in the skillet and cook for 2-3 minutes on each side until golden brown. Repeat with the remaining slices, adding more butter as needed.

Prepare the Seasonal Fruit

  1. 4

    Slice the Banana

While the toast is cooking, slice the banana into rounds.

  2. 5

    Combine the Fruits

In a bowl, combine the sliced banana, strawberries, and blueberries. Drizzle honey over the fruit and gently toss to combine.

  3. 6

    Garnish

Serve the brioche French toast warm, topped with the seasonal fruit mixture and garnish with mint leaves.
