Method

Soup Preparation

  1. 1

    Sauté Onions

In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and sauté for about 15-20 minutes until they become golden brown and caramelized.

  2. 2

    Add Wine

Once the onions are caramelized, add the dry white wine to the pot. Scrape the bottom of the pot to deglaze it and let the wine reduce for about 5 minutes.

  3. 3

    Add Broth and Seasonings

Pour in the beef broth, add the thyme, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.

  4. 4

    Adjust Seasoning

Taste the soup and adjust the seasoning with more salt and pepper if necessary. Remove the bay leaf before serving.

Topping and Serving

  1. 5

    Prepare Baguette

While the soup is simmering, preheat the oven to 350°F (175°C). Slice the baguette into 1-inch thick slices and place them on a baking sheet. Toast in the oven for about 10 minutes until golden.

  2. 6

    Assemble the Soup

Ladle the hot soup into oven-safe bowls. Place a few slices of the toasted baguette on top of each bowl.

  3. 7

    Add Cheese

Sprinkle the Gruyere and Parmesan cheese generously over the baguette slices.

  4. 8

    Melt the Cheese

Place the bowls under the broiler for about 2-3 minutes until the cheese is bubbly and golden brown.

  5. 9

    Serve

Carefully remove the bowls from the oven and let them cool slightly before serving. Enjoy your French Onion Soup!
