Add Wine
Once the onions are caramelized, add the dry white wine to the pot. Scrape the bottom of the pot to deglaze it and let the wine reduce for about 5 minutes.

Add Broth and Seasonings
Pour in the beef broth, add the thyme, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.

Adjust Seasoning
Taste the soup and adjust the seasoning with more salt and pepper if necessary. Remove the bay leaf before serving.

Prepare Baguette
While the soup is simmering, preheat the oven to 350°F (175°C). Slice the baguette into 1-inch thick slices and place them on a baking sheet. Toast in the oven for about 10 minutes until golden.

Sprinkle the Gruyere and Parmesan cheese generously over the baguette slices.

Place the bowls under the broiler for about 2-3 minutes until the cheese is bubbly and golden brown.
