Marinate the Chicken
In a large bowl, combine the chicken pieces with red wine, garlic, thyme, bay leaves, salt, and black pepper. Cover and refrigerate for at least 2 hours, preferably overnight.

Brown the Chicken
Remove the chicken from the marinade and pat dry. In the same pot, add the chicken pieces and brown them on all sides, about 5-7 minutes. Remove the chicken and set aside.

Cover the pot and let it simmer on low heat for about 45 minutes to 1 hour, or until the chicken is tender and fully cooked.
