Crust Preparation
- 1
Make the Dough
In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the chilled, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- 2
Add Water
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. It should not be sticky. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- 3
Roll Out the Dough
On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer it to a 9-inch tart pan, pressing it into the edges and trimming any excess dough.
- 4
Pre-bake the Crust
Preheat your oven to 350°F (175°C). Prick the bottom of the crust with a fork and line it with parchment paper. Fill with pie weights or dried beans. Bake for 15 minutes, then remove parchment and weights and bake for another 10 minutes until golden. Let it cool.
Filling Preparation
- 5
Melt the Chocolate
Place the chopped dark chocolate in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until just simmering. Pour the hot cream over the chocolate and let it sit for 5 minutes before stirring until smooth.
- 6
Combine Ingredients
In a separate bowl, whisk together the eggs, granulated sugar, vanilla extract, and salt until combined. Gradually add the chocolate mixture to the egg mixture, whisking constantly until fully combined.
- 7
Fill the Crust
Pour the chocolate filling into the cooled tart crust, smoothing the top with a spatula.
- 8
Bake the Tart
Bake the tart in the oven at 350°F (175°C) for about 25-30 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool completely at room temperature.
- 9
Chill and Serve
Once cooled, refrigerate the tart for at least 2 hours before serving. Slice and enjoy your rich chocolate tart!
