Mousse Preparation

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk the Egg Yolks
In a separate bowl, whisk the egg yolks with the granulated sugar until the mixture is pale and thick. Stir in the vanilla extract and a pinch of salt.

Combine Mixtures
Gradually add the melted chocolate mixture to the egg yolk mixture, stirring gently until fully incorporated.

Chill the Mousse
Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Prepare the Whipped Cream
In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.

Whip the Cream
Using a hand mixer or stand mixer, beat the cream mixture on medium-high speed until soft peaks form. Be careful not to overmix.

Once the mousse has set, remove it from the refrigerator. Top with the whipped cream and serve immediately.
