Preparing the Cake Batter

Melt the Chocolate and Butter
In a heatproof bowl over simmering water (double boiler), combine dark chocolate and unsalted butter. Stir occasionally until completely melted and smooth. Remove from heat and let it cool slightly.

Mix Sugar and Eggs
In a separate bowl, whisk together granulated sugar and eggs until the mixture is pale and fluffy. This should take about 3-5 minutes.

Add Flour
Sift in the all-purpose flour and gently fold until just combined. Be careful not to overmix.
Baking the Fondants

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins in the preheated oven and bake for 10-12 minutes or until the edges are firm but the center is still soft. The top should be slightly cracked.

Cool Slightly
Remove from the oven and let them cool for 1-2 minutes. Run a knife around the edges to help release the cakes.

Invert and Serve
Carefully invert each ramekin onto a plate. The fondant should slide out easily, revealing a molten center. Serve immediately with a scoop of vanilla ice cream on the side and fresh berries, if desired.
