Method

Preparing the Cake Batter

  1. 1

    Melt the Chocolate and Butter

In a heatproof bowl over simmering water (double boiler), combine dark chocolate and unsalted butter. Stir occasionally until completely melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Mix Sugar and Eggs

In a separate bowl, whisk together granulated sugar and eggs until the mixture is pale and fluffy. This should take about 3-5 minutes.

  3. 3

    Combine Mixtures

Pour the melted chocolate and butter mixture into the egg and sugar mixture. Add vanilla extract and salt. Gently fold together until well combined.

  4. 4

    Add Flour

Sift in the all-purpose flour and gently fold until just combined. Be careful not to overmix.

Baking the Fondants

  1. 5

    Prepare the Ramekins

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder or flour to prevent sticking.

  2. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  3. 7

    Bake

Place the ramekins in the preheated oven and bake for 10-12 minutes or until the edges are firm but the center is still soft. The top should be slightly cracked.

  4. 8

    Cool Slightly

Remove from the oven and let them cool for 1-2 minutes. Run a knife around the edges to help release the cakes.

  5. 9

    Invert and Serve

Carefully invert each ramekin onto a plate. The fondant should slide out easily, revealing a molten center. Serve immediately with a scoop of vanilla ice cream on the side and fresh berries, if desired.
