Method
Preparing the Beef

Season the Beef
Pat the Chateaubriand beef tenderloin dry with paper towels. Season generously with salt and black pepper on all sides.

Sear the Beef
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned beef tenderloin and sear for about 3-4 minutes on each side until a golden brown crust forms.

Finish Cooking
Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Adjust time for desired doneness.
Making the Herb Butter

Prepare the Herb Butter
In a small bowl, combine the unsalted butter, chopped parsley, chopped thyme, and minced garlic. Mix well until all ingredients are thoroughly combined.

Serve
Once the beef is cooked to your liking, remove it from the oven. Allow it to rest for 5-10 minutes. Top with a generous dollop of the herb butter before slicing.
Cooking the Sides

Prepare the Vegetables
While the beef is resting, prepare your chosen sides. If using asparagus, toss with olive oil and salt. For baby potatoes, toss with salt and olive oil as well.

Cook the Sides
For asparagus, place in a steamer or sauté in a pan for 5-7 minutes until tender. For baby potatoes, boil in salted water until fork-tender, about 15-20 minutes.
