Bisque

Olive Tapenade

Method

Bisque

  1. 1

    Prepare the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced carrot. Sauté for 5 minutes or until the onion is translucent.

  2. 2

    Add Garlic and Tomatoes

Add the minced garlic and Roma tomatoes to the pot. Cook for an additional 5 minutes, stirring occasionally.

  3. 3

    Simmer with Stock

Pour in the vegetable stock and bring to a boil. Reduce heat to low and let it simmer for 20 minutes.

  4. 4

    Blend the Bisque

Using an immersion blender, blend the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

  5. 5

    Finish with Cream and Season

Stir in the heavy cream, salt, black pepper, and fresh basil. Heat through for another 5 minutes.

Olive Tapenade

  1. 6

    Combine Ingredients

In a food processor, combine the green olives, capers, minced garlic, fresh parsley, olive oil, and lemon juice.

  2. 7

    Blend to Desired Consistency

Pulse the mixture until it reaches a coarse paste consistency. You can add more olive oil if the tapenade is too thick.

  3. 8

    Taste and Adjust

Taste the tapenade and adjust seasoning if necessary, then set aside until ready to serve.
