For the Arepas

Prepare the Arepas Dough
In a large bowl, combine masarepa, water, and salt. Mix until a dough forms. Let it sit for about 5 minutes to hydrate.

Shape the Arepas
Divide the dough into 8 equal portions and shape each portion into a disc about ½ inch thick.

Braised Cooking
Pour in the chicken broth, bring to a simmer, cover, and reduce heat. Cook for about 2-3 hours or until the pork is tender and easily shredded.

Add Tomatoes and Season
Add diced tomatoes, minced garlic, and salt. Cook for another 5-7 minutes until tomatoes are softened and the mixture is fragrant.

Finish with Cilantro
Stir in the chopped cilantro and cook for an additional 2 minutes. Remove from heat.
