    Prepare the Nut Filling

    In a mixing bowl, combine the chopped pistachios, walnuts, hazelnuts, granulated sugar, and ground cinnamon. Mix until well combined and set aside.

    Prepare the Phyllo Dough

    Thaw the phyllo dough according to the package instructions. Preheat the oven to 350°F (175°C). Melt the unsalted butter in a saucepan over low heat.

    Assemble the Baklava

    In a 9x13 inch baking dish, brush a layer of melted butter across the bottom. Place one sheet of phyllo dough in the dish, brushing it lightly with butter. Repeat this process for about 8 sheets to create the base layer.

    Add Nut Filling Layers

    Spread a layer of the nut mixture over the phyllo. Cover with two more sheets of phyllo, brushing each with butter. Repeat the layering process (nut mixture then phyllo) until all the nuts are used, finishing with a top layer of at least 8 sheets of phyllo, each brushed with butter.

    Cut the Baklava

    Using a sharp knife, cut the assembled baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes, or until golden brown and crisp.

    Prepare the Honey Syrup

    While the baklava is baking, combine the water, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce the heat and let simmer for about 10 minutes. Remove from heat.

    Drizzle the Syrup

    Once the baklava is done baking, immediately pour the hot honey syrup evenly over the hot baklava. Allow to cool completely before serving.
