Pork Marinade Preparation

Marinate the Pork
In a large bowl, combine the annatto paste, orange juice, lime juice, garlic, cumin, oregano, salt, and black pepper. Mix until well combined.

Add Pork
Cut the pork shoulder into large chunks and add to the marinade. Ensure the pork is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.
Cooking the Pork

Preheat Oven
Preheat your oven to 300°F (150°C).

Wrap in Banana Leaves
Lay out the banana leaves on a flat surface. Place the marinated pork in the center of the leaves and fold the leaves over the pork to enclose it completely. Use kitchen twine to secure the package.

Rinse the cilantro under cold water and chop coarsely.
