Pork Marinade Preparation

    Marinate the Pork

    In a large bowl, combine the annatto paste, orange juice, lime juice, garlic, cumin, oregano, salt, and black pepper. Mix until well combined.

    Add Pork

    Cut the pork shoulder into large chunks and add to the marinade. Ensure the pork is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Wrap in Banana Leaves

    Lay out the banana leaves on a flat surface. Place the marinated pork in the center of the leaves and fold the leaves over the pork to enclose it completely. Use kitchen twine to secure the package.

    Bake Pork

    Place the wrapped pork in a baking dish and cover with foil. Bake for 4 to 5 hours, or until the pork is tender and easily shreds with a fork.

Preparing Toppings

    Pickle the Red Onion

    Thinly slice the red onion and place it in a bowl. Pour over a mixture of vinegar, water, and a pinch of salt, and let it sit for at least 30 minutes.

    Prepare Cilantro

    Rinse the cilantro under cold water and chop coarsely.

Taco Assembly

    Assemble Tacos

    Warm the corn tortillas on a skillet. Once the pork is cooked, shred it using two forks. Layer the shredded pork onto each tortilla.

    Add Toppings

    Top each taco with pickled red onion, chopped cilantro, and drizzle with habanero sauce to taste.
