Tuna Tartare Preparation

Prepare Tuna Mixture
In a bowl, combine the fresh tuna (diced), soy sauce, sesame oil, chopped green onions, lime juice, diced avocado, and chili flakes. Mix well and set aside.

Fry the Tortillas
In a pan, heat vegetable oil over medium heat. Once hot, fry the corn tortillas one at a time until they are crispy and golden brown, about 2-3 minutes per side. Remove and place on paper towels to drain excess oil. Sprinkle with salt.
Bun Reduction Preparation

Make the Bun Reduction
In a small saucepan, combine chicken broth and soy sauce. Bring to a simmer over medium heat and let it reduce for about 10-15 minutes until slightly thickened. Stir in sesame seeds and set aside.
Noodle Preparation

Cook the Noodles
In a pot, bring water to a boil. Add rice noodles and cook according to package instructions (usually about 4-6 minutes). Drain and rinse under cold water. Toss with sesame oil to prevent sticking.
Assemble the Dish

Combine and Serve
On each tostada, layer a generous scoop of tuna tartare. Serve alongside the cooked rice noodles topped with the bun reduction and sprinkle with additional sesame seeds if desired.
