    Marinate the Steak

    In a small bowl, combine ancho chili powder, olive oil, salt, and black pepper to create a marinade. Rub this mixture all over the ribeye steak and let it marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for more flavor.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Once hot, place the marinated steak onto the grill/skillet and cook for 4-5 minutes on each side for medium-rare, or until your preferred doneness is reached. Remove the steak from heat and let it rest for 5-10 minutes before slicing.

    Prepare the Bread

    While the steak is resting, slice the baguette or ciabatta loaf in half lengthwise. Optionally, toast the bread lightly on the grill or in a toaster for added crunch.

    While the bread is toasting, slice the avocado, tomato, and red onion. You can also wash the lettuce and set it aside.

    On the bottom half of the bread, layer the sliced steak, lettuce, tomato, avocado, and red onion. Squeeze lime juice over the top for added flavor. Spread sour cream on the top half of the bread and place it on top to complete the sandwich.
