1. Prepare the Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter may be slightly lumpy, which is okay.
2. Heat the Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of butter or cooking spray.
3. Cook the Pancakes
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
4. Serve
Serve the pancakes warm with your favorite syrup and a pat of butter on top.
