Make the Pie Crust
In a large bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Filling
In a large bowl, toss the fresh fruit with sugar, cornstarch, cinnamon, and lemon juice. Let it sit for about 10 minutes to allow the juices to develop.
Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disk of dough on a floured surface, then place it in a 9-inch pie pan. Fill with the fruit mixture. Roll out the second disk of dough and place it over the filling. Cut slits in the top crust to allow steam to escape. Crimp the edges to seal.
Bake the Pie
Bake in the preheated oven for 35-45 minutes, or until the crust is golden brown and the filling is bubbly. Let it cool before serving.
