Prepare the Pancake Batter
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the buttermilk, melted butter, and egg. Combine the wet and dry ingredients until just mixed; do not overmix.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2 minutes on the other side until golden brown.

Cook the Bacon
In a separate skillet, cook the Applewood smoked bacon over medium heat until crispy, about 5-7 minutes. Drain on paper towels.

Serve
Serve the pancakes warm with the cooked eggs and bacon on the side. Enjoy!
