Prepare the Pancake Batter
In a large bowl, mix together the flour, baking powder, sugar, and salt. In another bowl, whisk the buttermilk and egg together. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Melt 1 tablespoon of butter in the pan. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.

Cook the Bacon
In a separate skillet, cook the Applewood smoked bacon over medium heat until crispy, about 4-6 minutes. Flip halfway through cooking.

Serve
Serve the pancakes stacked with a pat of butter on top and the crispy bacon strips on the side. Enjoy your meal!
