Steak

Bordelaise Sauce

Truffle Cheese Fries

Method

Steak Preparation

  1. 1

    Season and Cook the Steak

Season the flat iron steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Let them rest for 5 minutes before serving.

Maître d’ Butter Preparation

  1. 2

    Make the Butter

In a bowl, mix the softened unsalted butter with minced garlic, chopped parsley, lemon juice, and salt. Form into a log and wrap in plastic wrap, refrigerate until firm.

Bordelaise Sauce Preparation

  1. 3

    Prepare the Bordelaise Sauce

In a saucepan, combine red wine and minced shallots. Simmer until reduced by half. Add beef stock and thyme, and continue to simmer until thickened. Finish with butter, and season with salt and pepper to taste.

Truffle Cheese Fries Preparation

  1. 4

    Prepare the Fries

Bake the frozen French fries according to package instructions. Once done, drizzle with truffle oil and sprinkle with truffle cheese and salt. Return to the oven for an additional 2-3 minutes until the cheese melts.

Serving

  1. 5

    Plate the Dish

Serve the rested steak topped with a generous slice of maître d’ butter alongside a portion of truffle cheese fries. Drizzle the bordelaise sauce over the steak.
