Prepare Lobster Filling

Cook Lobster

If using live lobsters, boil them in salted water for about 8-10 minutes until they turn bright red. Remove from water, cool, and remove the meat from the shells.

Mix Filling

In a bowl, combine the lobster meat, lemon-mustard aioli, chopped celery, chives, salt, and black pepper. Gently mix until all ingredients are well incorporated.

Prepare Brioche Rolls

Toast Rolls

Melt clarified butter in a skillet over medium heat. Lightly toast the brioche rolls in the skillet until golden brown on both sides.

Assemble Lobster Rolls

Fill Rolls

Generously fill each toasted brioche roll with the lobster mixture. Serve immediately, optionally with extra lemon-mustard aioli on the side.
