Method

Preparation

  1. 1

    Prep the Fish

Pat the seabass fillets dry with a paper towel. Season both sides with salt and black pepper.

  2. 2

    Prepare the Vegetables

Trim the ends off the asparagus and halve the cherry tomatoes. In a bowl, combine asparagus, tomatoes, minced garlic, and a tablespoon of olive oil. Toss to coat.

Cooking

  1. 3

    Cook the Vegetables

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the vegetable mixture and sauté for 5-7 minutes until the asparagus is tender and slightly charred. Remove from the skillet and set aside.

  2. 4

    Cook the Seabass

In the same skillet, add the remaining olive oil. Once hot, place the seabass fillets skin-side down and cook for 4-5 minutes until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes until cooked through.

Finishing Touches

  1. 5

    Make the Sauce

In a small bowl, mix together lemon juice, chopped parsley, and capers.

  2. 6

    Plate the Dish

On each plate, place a seabass fillet, and arrange the sautéed vegetables alongside. Drizzle the lemon-caper sauce over the fish and serve immediately.
