    Caramelize Onions

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are golden brown and caramelized (about 20-25 minutes).

    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C). Rub the prime rib with the remaining olive oil, salt, pepper, and fresh rosemary.

    Roast the Prime Rib

    Place the prime rib in a roasting pan and roast in the preheated oven for 20 minutes. Then reduce the temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1 hour more. Let it rest for 15 minutes before slicing.

    Assemble the Roll

    Slice the prime rib thinly. Lay out the slices, top with caramelized onions and grated Gruyere cheese. Drizzle with horseradish cream.

    Roll the slices up and secure with toothpicks if desired. Serve warm.
